Carb up with Marathon Chicken and Roast Vegetable Pasta

Marathon Chicken and Roast Vegetable Pasta Executive Chef Mardy Ra Serves 4 - 6 I created this recipe with competitive-sports in mind. Being an active athlete myself, I understand that it takes more than just determination and training to excel. A nutritious and wholesome diet goes a long way and I hope this will nourish your body to help you with your Marathon journey. Want more carbs? Up the pasta, no problem! This dish works great as a make-ahead salad, too. 16 oz.                          whole grain fusilli pasta, or your favourite 4 – 6 oz                       boneless, skinless Free Range chicken breasts ¾ cup                          extra virgin olive oil ½ bunch                      fresh basil 1 small package          organic flat leaf parsley 1                                  organic lemon, zested and juiced 3 Tbsp.                        white balsamic vinegar 1 small                         Italian eggplant, cubed 1                                  red bell pepper, diced 1                                  fennel bulb, shaved or slivered 1 medium                    zucchini, cubed Sea salt and fresh ground pepper Preheat oven to 450F. Place the eggplant in a medium bowl, season with sea salt and pepper and drizzle with 2-3 tbs of olive oil. Toss well to coat. On a parchment paper lined baking sheet, tip the seasoned eggplant and spread out evenly. Place in preheated oven and bake for 10 minutes, stirring twice. In the same bowl, place the red bell pepper, fennel bulb, and zucchini. Season with sea salt and pepper and drizzle with 2 tbs of olive oil. Toss well to coat the vegetables. When the eggplant is nearly tender, tip the remaining vegetables onto the baking tray. Stir well to combine. Return to the oven and bake for 10-15 more minutes, stir twice. When the vegetables are lightly browned, remove from the oven, set aside to cool. Reduce the oven to temperature 375F. Meanwhile, bring a large pot of salted water to a boil, cook the pasta according to the directions on the package. Drain well. Tip onto a baking tray and drizzle with ¼ cup of olive oil, toss well to coat, set aside to cool. Preheat an ovenproof non-stick pan in the oven. Season the chicken with sea salt and pepper to taste, and drizzle with a bit of olive oil. With an oven proof mitt, remove the preheated pan from the oven, set over medium heat. Place the seasoned chicken in the pan and brown on one side for 3. Turn chicken and transfer the pan back into the oven to finish cooking ~ about 12 – 16 minutes depending on the thickness of the breast meat. Remove from the oven and allow to rest for 5 minutes. In a large bowl place the cooled pasta and the roast vegetables. Toss well to combine. Cut rested chicken into cubes, and add to pasta mixture. Add chopped fresh herbs, balsamic vinegar, and the lemon juice and zest. Toss well. Taste for season and adjust to taste with sea salt and pepper. Honda Celebration of Light 2017

Honda Celebration of Light is returning to Vancouver this summer for the 27th year. Here are some fun facts to celebrate the return: It is Vancouver's largest free and public event and is the longest running offshore fireworks competition in the world Originally known as Benson & Hedges Symphony of Fire This year's participating countries are Japan, represented by AKARIYA Fireworks (July 29), United Kingdom, represented by Jubilee Fireworks (August 2) and Canada, represented by Royal Pyrotechnie (August 5) To celebrate Canada's 150th birthday, all three countries must feature an iconic Canadian song in their musical soundtrack. This increases the display from 25 minutes to 28 minutes The public is encouraged to vote here for the Canadian song. Voting is open until April 2nd and the top three songs will be allocated, one to each country The fireworks are launched in the middle of English Bay and start at 10:00 pm Honda Celebration of Light generates approximately $40 million dollars for the local economy annually Estimated annual attendance is 1.2 million people Last year's final display (USA, represented by Walt Disney Company) broke attendance records "The Honda Celebration of Light sparks togetherness and celebrates the spirit of our city as Vancouver's premier event" Paul Tilbury, co-chair of the Vancouver Fireworks Festival Society. Lynda & Pat’s September Vancouver Wedding

We first met Lynda and Pat in January 2016; right away, we clicked. They were very laid back and had a really good energy about them. As we planned for their special day, every meeting was fun and full of laughter. They really wanted their guests to enjoy themselves and feel taken care of. Our venue suited so they could hold both their ceremony and reception and travel was not required around the city. Lynda wanted a simple, yet elegant look for her wedding on board the Pacific Yacht. The Dining Salon consisted of champagne linens to compliment our gold chiavari chairs, and white hydrangeas for centerpieces.  With the ceremony being the most important part of their day, Lynda wanted the Sky Deck to be breathtaking. From exchanging vows with the ocean and mountains as their backdrop, to dancing the night away under a beautifully draped tent with glistening lights,  the yacht was transformed into an even more elegant venue. After a dockside ceremony, guests enjoyed a 6-hour cruise around the Vancouver Harbour, which included a cocktail hour, buffet dinner, speeches and dancing. We even arrived back to dock after 4 hours to drop off the children. Lynda then changed into dress #2 and was ready to party! Congratulations again to Lynda and Pat. It’s a Wrap! 2016 Miracle Christmas Toy Drive

In December, we hosted an Open House & Toy Drive to collect toys and other gifts for the Lower Mainland Christmas Bureau. December 10th and December 11th we welcomed upwards of 100 guests on board with delicious hot chocolate, "pom-mosa's", delicious chef-carved Chillwack ham and cookies. We warmed the Pacific Yacht with holiday cheer, the joyful sounds of Christmas Carols led by the Senior Choir of Collingwood School; for many of us, it made the season truly feel like Christmas. On the chill but beautifully sunny morning of Tuesday December 13th, we moved the Yacht to the Vancouver Harbour Flight Centre and fifteen PYC 'elves' carried bags and bags of gifts to the Pan Pacific Hotel where there was a definite mountain of gifts. We thank all who attended and so generously brought gifts. Watch for this year's Open House dates for our Second Annual Open House and Toy Drive.  ...
